</div>As Summer quickly approaches our minds wander and we find ourselves daydreaming about far-away potential vacation destinations.  We&#8217;ve talked before about the tranportative qualities of food&#8230;.well, the Mediterranean must have been whispering to us because this week&#8217;s menu features our favorite dishes from this beautiful part of the world.  </p>
<p>We first take a trip to Southern France:  next week&#8217;s Roast Chicken rubbed with a herbs de Provence-flecked butter is what the grand-mère of our dreams serves us every Sunday for a late, leisurely lunch.  It&#8217;s roasted until flavorful and juicy on the inside with golden, crispy skin on the outside, all that&#8217;s needed is a simple white wine pan sauce a few roasted potatoes and a pile of sautéed baby chard. Heaven.</p>
<p>Next we sail over to Italy, where we share their love for simple, fresh, gorgeous produce.  This sensibility is especially evident in dishes like grilled Summer squash with a basil-almond dressing and a first-of-the-season corn salad with cherry tomatoes, arugula, radish and more of that beautiful basil.  Bellisimo!</p>
<p>Our lamb kofta-style skewers take us to white sand beaches of Greece and Cyprus.  A bite of chickpea falafel and all of a sudden we&#8217;re in  Egypt.  Whole wheat couscous with dates and pine nuts are right at home on any Israeli menu.  Order now and  have the flavors of the Mediterranean brought to your doorstep,  no passport necessary!</p>

</div>Although as I write these words the weather is overcast as per usual for a San Francisco morning in June, summer is most definitely right around the corner.  A walk around last week&#8217;s farmers market revealed early summer treats with hints as to what&#8217;s to come.  Small piles of summer squash, field-grown tomatoes, corn, and early season peaches and nectarines were there to greet me.  Indeed, at the Tory Farm stand I experienced the first dribble of peach nectar down my chin as I bit into one of their gorgeous, perfect ripe Ivory Duchess peaches.  </p>
<p>We&#8217;re celebrating the beginning of Summer with our annual switch-out from our weekly offering of sweet potato fries to polenta fries.  Those sweet potatoes will be back when Autumn rolls back around, but for now creamy polenta with a crunchy exterior will take their place (soon we&#8217;ll add in fresh corn kernels for little pops of sweetness).  Try them with next week&#8217;s  Achiote-Rubbed Chicken Breast- paired with Cherry Tomato Salsa and Kale with Toasted Pepitas &#038; Queso Fresco, you&#8217;ve got an early summer dinner to make everyone happy. This the first appearance of cherry tomatoes on our menu this year and we couldn&#8217;t be more excited.  Other newbies?  Zucchini (in our fresh-baked Zucchini Bread) and  cucumbers (pickled and tossed into our Orzo Pasta Salad).  </p>

</div>Potatoes are  a great backyard crop.  Take potatoes that have &#8220;eyed&#8221; and bury them deep in the ground or in a container. They&#8217;ll grow into a shin-high plant and flower before wilting and turning brown.  That&#8217;s when you know your potatoes are ready dig up.  These are the best potatoes you&#8217;ll ever eat: straight from the ground, so tender that when you clean them some of the skin rubs off with the dirt.  I like to take the small ones, steam them and toss them with butter and Maldon salt.  The thin skin yields to the creamiest potato center- seriously one of life&#8217;s greatest pleasures.  If you have a little bit of land or a spare container and some dirt, I urge you to give potato growing a shot!</p>
<p>Mariquita Farms has also been harvesting potatoes- French Fingerlings,  German Butterballs,  Ruby Crescents, Russian Bananas and more- this week we just couldn&#8217;t pick one variety.  And so we picked them all to put in our roasted potato salad.  What better way to highlight all the little differences in size, texture and flavor than to prepare them all the same (olive oil, salt, herbs, hot roast in the oven), toss them together, and finish them with a zippy red wine vinaigrette to create both contrast and balance in the resulting dish.  </p>
<p>These potatoes will be right at home aside our roasted pork loin  (slathered with Dijon, maple and herbs- hello!) and equally delicious with our Middle-Eastern spice rubbed chicken.  I  can see myself tossing them with our sautéed spinach with pine nuts and chili flakes for a quick lunch.  However you eat them, we hope you enjoy!</p>

</div>This time of year we begin to see many new treats from farms all over Northern California.  By the time September&#8217;s abundance is here, it&#8217;ll be hard to believe we were ever wanting for anything, but while Winter&#8217;s rutabaga and radicchio are still fresh in the mind, we happily welcome every sweet addition to the farmers market.  The latest to make their debut are beautiful blushing apricots.  This mostly sweet-a little tart stone fruit has a shorter season than most stone fruit so we like to snatch them up while we can.  Our favorites right now are the Royal Blenheims grown by Everything Under the Sun Farm and the Robada variety from Tory Farm.</p>
<p>We&#8217;ll be using those Robadas in a savory fruit salad on next week&#8217;s menu.  This dish is simple to put together and a go-to for potlucks, picnics, and dinner parties throughout the Summer.  We&#8217;re using the apricots right now, but later will substitute them out for plums, pluots, peaches, figs, or berries.  Here&#8217;s how you can do it yourself:  make sure whatever fruit you use is highest quality and slightly firm so it doesn&#8217;t fall apart or become mushy when you mix with the other ingredients. The sweetness of the fruit is matched well with something a little salty- we like to use nuts that we&#8217;ve roasted and salted ourselves.  Time for some green: peppery arugula provides balance to the sweet fruit and salty nuts along with handfuls of fresh herbs like cilantro, parsley, tarragon, basil, maybe even a little dill or chive.  Finally a simple shallot vinaigrette pulls it all together, just use enough to barely coat all the ingredients when you give them a final, gentle toss.  We think it&#8217;ll pair perfectly with next week&#8217;s Sweet-Spicy Rubbed Tri-Tip&#8230;.give it a try!</p>

</div>This, friends, has been an extremely exciting week here at Square Meals.  It all began on Sunday when we were featured in the <a href="http://www.sfchronicle.com/food/article/High-quality-meal-delivery-offers-takeout-4506903.php?t=d220dba9238be270f3">SF Chronicle&#8217;s Food Section</a>!  We spoke with the writer a few weeks a go and a photographer came over last week, so we knew it was coming. Still, it was incredible to see the print version with a color photo of our little kitchen and shop, no less!  </p>
<p>And if that wasn&#8217;t enough excitement for the week, we then found out that local king salmon is now available to us (and thusly, to you)!  We&#8217;ve been impatiently waiting as the non-commercial salmon season began a few weeks ago and our friends who&#8217;ve already caught and sampled  a few&#8217;s  early reports have been promising.  We, of course, are putting it on next week&#8217;s menu without hesitation!  For its debut we are just seasoning it with a little salt and pepper and searing it until rare so that you can finish it how you like it best at home.  Try it with our Sugar Snap &#038; English Pea Salad with Mint, Radish, Pea Tendrils for a true taste of Spring.    </p>

</div>Today&#8217;s dispatch from the Square Meals kitchen is a short one.  All of a sudden we have pounds and pounds of Spring produce to work with.  Peas need to be stringed and shucked.  Favas need to be blanched and peeled.  There are cherries and apricots to pit, strawberries to hull.  Tarragon, frisee and dill to carefully pick and wash and dry. Vinaigrettes and aiolis need to be whisked.  Lemons and limes need to be juiced.  Radishes, carrots and celery need to be shaved.  </p>
<p>If you haven&#8217;t been to your local farmer&#8217;s market in a while, now is the time as tables are packed with gorgeous greens, ruby red cherries, raspberries and strawberries, bright yellow lemons, pale coral-orange apricots , almost-violet blueberries.  And if you don&#8217;t have time to go to the market, just order from us!  The menu below features, as always, the best the season has to offer!</p>

</div>Have you been by to visit our kitchen and cafe yet?  We open our doors at 7:00 am, though our kitchen-mates at Batter Bakery have been in for hours.  You are greeted by fresh-baked  scones (strawberry poppy seed, anyone?) and Sightglass Coffee brewing.  There&#8217;s a quiet hum as the cooks arrive and quietly begin work on their long lists of tasks.  As the morning progresses the hum becomes a full-blown buzz.  By lunch we&#8217;ve cooked close to 20 different dishes to be sold in our retail case, packed up for home delivery customers or plated and whisked out the door for catered lunches.  Around 3:00 or so the bulk of the work is done; everyone can relax a bit, take a break and regroup while  finishing tasks and cleaning up before the cooks who work the evening shift  arrive.  </p>
<p>While all this is going on in the kitchen, there is a steady stream of people coming in to take advantage of our sunny little dining area.  Being San Francisco we have, of course, tables made of reclaimed wood and free Wi-Fi.  It&#8217;s not unusual for someone to come in for breakfast, work through lunch and wind-down with an afternoon snack.  </p>
<p>This week is an especially good time to stop in as we are rolling out our Spring lunch menu.  Some highlights:  seasonal salads like our farm-fresh Cobb or Arugula and Strawberry with Toasted Walnuts.  There&#8217;s always a big bowl of Ribollita, full of kale and white beans, finished with a healthy shaving of Parmesan and a drizzle of olive oil.  Or go for a sandwich: our house-made Veggie Burger (pictured) is healthy and satisfying without leaving you too full to continue on with your day.  Bonus: after lunch, pick out dinner and dessert to take home from our retail case.<br />

			<content:encoded><![CDATA[<p></p><p>Like everyone else, we were saddened by Monday&#8217;s Boston Marathon bombings and our hearts go out to the victims and their families.  </p>
<p>This week we&#8217;re keeping it simple and sharing one of our favorite Spring recipes that combine some of our most favorite things into one tasty sandwich:  buttery toasted bread, very fresh goat cheese, herbs and asparagus.  The ingredients are all sourced from our beloved Ferry Plaza Farmers Market, of course feel free to substitute with whatever is best where you happen to live.</p>

The freshest asparagus you can find<br />
Olive oil<br />
Sea salt<br />
Yerba Santa &#8220;Crema&#8221; goat cheese<br />
Fresh herbs- dill, chervil, parsley, chives are our favorite combination<br />
Lemon zest<br />
Butter<br />
Della Fatoria semolina bread</p>
<p>1.  Preheat oven to 450° and place a baking sheet inside. Toss asparagus with a glug of olive oil and sea salt.  When oven is up to temperature, put asparagus on baking sheet- you&#8217;ll immediately hear a sizzle.  Roast for 2 or so minutes, give the pan a shake and roast for 2-3 minutes longer (depending on how big your asparagus is).  Remove from the oven when bright green. Set aside.</p>
<p>2.  Wash, dry and chop your herbs and mix into the goat cheese with lemon zest and a sprinkle of sea salt.  Add a little olive oil to loosen if needed.  Your asparagus should be cool, chop into smallish pieces and mix in with the goat cheese.  </p>
<p>3.  Now, you could just spread this mixture on bread and eat it as is.  We like to spread a thick layer between two slices of semolina bread and toast it in butter (just melt butter in a pan over medium-high heat and toast for a few minutes on each side).  And as with most things, this is delicious topped with an over easy farm egg.  Enjoy!<br />

</div>What a week?!  Gorgeous sunny days and the Giants&#8217; 10-0 win over the Rockies (thanks, Barry Zito!) almost take the sting out of the looming Monday&#8217;s looming tax deadline.  While next week might bring cooler temperatures and lighter wallets,  we&#8217;ve tried to make sure you&#8217;ll at least be able to eat well.   </p>
<p>We&#8217;re taking  a trip around the globe, from Mexico to Thailand  to the good ol&#8217; American South.</p>
<p>We&#8217;ve waxed on about Mexican cuisine before- their mastery of slow-simmered meats and sauces, bright salsas, and perfectly seasoned ceviches can be a revelation.  We lean on these culinary traditions when making a beer-braised pork shoulder with citrus, dried chilies and herbs, cooked until completely tender.  We serve this along-side an escabeche-style salad of fresh vegetables, slightly pickled- a crunchy counterpoint to the tender pork.  </p>
<p>Next we go to Thailand for our Red Curry with Spring Vegetables.  Fragrant and flavorful red chilies, lemongrass, ginger and galangal come together to create an addictive broth to which we add the amazing vegetables Mariquita Farms parade through our kitchen.   Served over jasmine rice, this couldn&#8217;t be a simpler, quicker healthy meal.</p>
<p>Finally to the South!  It&#8217;s been a while since we&#8217;ve had mac and cheese on the menu.  There is something irresistible about this creamy, cheesy favorite.  Pop it in the oven, write your check to Uncle Sam, and it&#8217;s bubbling, rich goodness will help make it all better.<br />
