			<content:encoded><![CDATA[<p></p><p>Did you know?  Apricots are thought to have been cultivated as far back as 3000 B.C.  It is said that they originated in Armenia, were brought  to Europe (by no less than Alexander the Great), before making their way to the orchards of California.  There&#8217;s also the incredible tale of wild salmon. Salmon begin their lives in fresh water river, migrate to the ocean for up to five years before returning their original river hometown to spawn the next generation.  How do they find their way back, you ask? Some say through olfactory memory. They smell their way back home, pretty amazing, right?</p>
<p>You may have noticed we here at Square Meals get  a little excited about our food (see: asparagus, peas, kale).  Mostly because we are gluttons who love to cook and eat good local food.  But also because we have a great appreciation for the bounty at our doorstep.  The well-traveled, ancient apricot has a short peak season, a small window when nature conspires to create an amazing sweet, floral-y, musk-y, altogether unique bite of fruit.  Local wild-caught salmon, once  abundant, have sadly been on the brink of disaster for years now.  This year looks to be a banner year for Salmon fishing for the first time in recent memory, and we couldn&#8217;t be more thankful.  </p>
<p>This week we encourage you to not only take time to smell the roses, but to ponder other miraculous little bits of nature in your immediate surroundings.  We also encourage you try our first-of-the-season local wild king salmon.  We cook it simply to let the natural flavors shine, though our dilly cucumber tzatziki does make a perfect accompaniment.  We also have fresh apricots making their first appearance of the year, both in our stuffed chicken with loaded with apricot, fresh herbs and leeks and in our Israeli couscous salad with even more fresh herbs and preserved lemon.  Eat up!<br />

			<content:encoded><![CDATA[<p></p><p>Kale.  Who would&#8217;ve thought it would be the star of our show?  We&#8217;ve raved about asparagus and praised every pea to come through our door, but it&#8217;s the kale that has stolen your  hearts.  Raw kale, at that!</p>
<p>Creating the 20-item menu every week is a favorite task among our chefs.  A time to sit down and talk just about food- we find inspiration from farmers market trips or in memories of meals eaten in far-away places.  We debate about the best way to feature the first-of-the-season basil pesto we are so excited to make  (alas we can&#8217;t put it on everything&#8230;).  And of course we think about you! When our regular customer Chris told us of his undying love for Petrale Sole, we put it on the menu the next time our fishmonger told us he had it (coincidentally it just so happens to be making an appearance on this week&#8217;s menu&#8230;you&#8217;re welcome, Chris!).</p>
<p>This week you made it easy on us, our raw kale salad has been trending in the Square Meals community and we are happy to oblige. This time we&#8217;re adding roasted radishes (our current favorite radish preparation, the usually peppery radish takes on an earthy sweetness that&#8217;s the perfect match with kale), crispy almonds, and a creamy-Dijon mustard dressing to bring it all together.  Try it underneath our Herb-Lemon Chicken for dinner or pair it with the Green Lentil and Quinoa Salads for a lunch- time salad trio.  Or, by all means,  have a big bowl full on its own.</p>

Adam&#8217;s mom instilled in him a firm belief that a burger should be prepared in a skillet to best utilize the resulting grease in which to cook the onions to pile atop of said burger (he&#8217;s from the  Midwest, waste not, want not!).  Amar&#8217;s mom made <em>everything</em> from scratch- from yogurt to bread (is it any wonder he now makes all our fresh cheese?).</p>

<p>Try our Raw Kale Salad with avocado, pepitas and queso fresco (made by Chef Amar,  our in-house fresh cheese specialist) or Rancho Gordo Ayocote Negro Beans with mushrooms, anchocress and a tiny sprinkle of that queso fresco sprinkled on top (we can&#8217;t help ourselves). There&#8217;s also the Achiote-Marinated Halibut&#8230;which brings us back to tacos! When you buy the halibut at our shop, you&#8217;ll have the option to &#8220;Taco Up&#8221;.  Taco-ing up gets you La Palma tortillas, cabbage slaw, and lime crema to turn your halibut into a delicious reminder of time spent South of the border (sadly, sand and Michalaras are not included).  Muy rico!</p>

			<content:encoded><![CDATA[<p></p><p>Square Meals loves holidays and the flurry of cooking for Easter and Passover got us thinking about the best holiday of them all (at least in our opinion)&#8230;Thanksgiving.  How can one not like Thanksgiving? It’s all about food, loved ones, and taking a moment to be appreciative for what you have.  But back to the most important part, the food.  Succulent, crispy-skinned roasted turkeys (free range, of course), savory gravy, and stuffing. Oh so many ways to stuff! Cornbread, wild rice, sourdough, mushrooms, oysters, sausage&#8230;&#8230;we love them all!</p>
<p>All this reminiscing made us hungry so, naturally, we’ve decided to roll out some of our favorite Thanksgiving classics in Spring.  You can order for delivery or stop by the store to pick up  Pilgrim Chicken and our Thanksgiving-in-Spring Stuffing&#8211; pair it with the Vegetable Medley of the Week (peas, carrots and spring onions) for a completely comforting meal. 			<content:encoded><![CDATA[<p></p><p>At Square Meals, we love buying directly from local farms and, judging by the questions we are asked frequently, you also care about where your  food is coming from.  Last week we mentioned our excitement about the Sugar Snap Peas which continue to find their way into our menu offerings, so this week I thought I’d tell you about one of the farms they come from.</p>
<p>Bill Crepps was not joking when he named his farm Everything Under the Sun. His plot in Dixon (near Sacramento) contains orchards with walnut and gorgeous Royal Bleinham apricot trees, fields of every kind green and herb you can think of and, in the summer, dozens of varieties of heirloom tomatoes. Bill also likes to tinker and has developed systems for naturally dehydrating many of his fruits and vegetables (his dried Juliette and Sweet Chelsea tomatoes keep our tomato cravings satiated throughout the winter). Developing relationships with people like Bill is something we really value at Square Meals, not only in order to put the freshest food on your plates, but also because food is about community and from our farmers to our customers, we love ours.  Eat up!</p>

<p>The Square Meals kitchen has been busy planning for our favorite Spring holidays and a new  brunch menu.  We serve brunch every Saturday and Sunday (did we mention the mimosas and bloody marys? good morning, indeed!).  We&#8217;d love to serve you our Spring Benedict: English muffin, herby hollandaise sauce, Hobbes&#8217; country ham, poached eggs and asparagus! Or how about the Breakfast Tacos with smashed pinquito beans, scrambled eggs, and ranchero sauce atop two house-made corn tortillas? There&#8217;s always the classic Fried Egg Sandwich with breakfast sausage patty and gruyere cheese.  Come and visit us this weekend at 2127 Polk Street!</p>
<p>Hosting Passover or Easter at your house this year?  Whether it&#8217;s just you, a few friends or your whole family- Square Meals has you covered.  Our Passover menu features all the standards: house-made gefilte fish, brisket, matzo ball soup- and of course, it wouldn&#8217;t be Passover without the tzimmes and charoset (sorry, lamb shank not included!).  And for Easter, we have the beloved honey glazed ham, creamy, cheesy scalloped potatoes, fresh Spring salad, and our light and fluffy Grandma Rolls.  </p>
<p>And if that&#8217;s not enough cooking in our cozy kitchen, we have next week&#8217;s menu!  We&#8217;re excited to announce that we&#8217;ll be featuring a lunch salad from now on.  Look forward to a seasonal salad for one on our a la carte menu beginning this week.  Our inaugural salad is Herb-Lemon Roasted Chicken Breast, sliced and served on top of little gem lettuce with baby carrots, asparagus spears and baby breakfast radishes with a creamy green garlic vinaigrette.  We hope you enjoy!</p>

<p><strong><em>March 19-25 Menu Notes</em></strong><br />
This week brings old favorites with a Square Meals seasonal twist.  Fresh off the docks, sand dabs are a classic San Francisco seafood dish.  Try our panko-parsley crusted version with Greek yogurt &#8220;tartar&#8221;sauce.  Also we have comforting braised chicken with white wine, garlic and shallots; especially tasty when eaten alongside our pommes anna (thin sliced potatoes, crisped slowly in butter with caramelized onions).  Our love affair with asparagus continues with our creamy asparagus-sorrel soup and as a part of a fresh salad (marinated raw asparagus with parsley, walnut-oil vinaigrette and Parmesan).  We were excited to see escarole get some respect in <a href="http://www.npr.org/2012/03/13/148525455/escarole-cinderella-of-the-chicories">NPR&#8217;s Kitchen Window</a> article, we can&#8217;t stop eating this slightly bitter green cooked in olive oil with lemon zest, garlic and chili flake.
